Lime sorbet: the recipe

Of course, if you lime is not your cup of tea, you can replace it with lemon.
Lime sorbet
(Doses for 6 persons)
- 125 mL of lime juice
- 250 mL of water
- 150 g of sugar
- 1 egg white
- 2 tea spoons of limoncello
Mix the lime juice, the water, the sugar and the limoncello in a large bowl. Make sure the sugar is well dissolved and set aside. Whip the albumen till it will be frothy and firm, and add it to the other ingredients. Gently incorporate the frothy egg white into the liquid phase, so that the mass will remain frothy. If the mass looks as losing volume, whip it a bit with the whisker. Pour the mixture in the ice cream maker and activate the function stir+cooling. Let it go for about 30 min or till the sorbet is firm. At this point, stop the ice cream maker machine, remove the mixing bowl and place it in the freezer, covered with some aluminum foil till the time to serve.
