Matcha gelato: the recipe

For the first recipe with matcha, I can’t help posting this gelato recipe that gave me so much satisfaction! :)

The biggest surprise was that this gelato does not harden too much when stocked in the freezer. On the contrary, it remains rather creamy :) Probably, the matcha powder acts as an additive and limits the formation of big ice crystals.

Matcha gelato

  • 375 mL of milk
  • 80 mL of cream
  • 150 g of sugar
  • 2 tea spoons of matcha tea

First of all, mix the matcha powder with the sugar. Disperse the powder finely in order to eliminate all the lumps. Pour then all the ingredients in the gelato machine and start stirring only for 5 minutes. After this time, start mixing+coolind down and let it go for about 20-25 minutes. Stop the gelato maker, remove the mixing bowl and cover it with some aluminum foil. Place the gelato in the freezer and let it rest there for at least 4-5 hours before serving.
