Mini coffee cakes: the recipe

 
 

Here it is, the first one of the serie “recipes with coffee’” :)

I just want to report the disappointment of my hubby who, as he detests coffee, asked: “Why a recipe with coffee?”. “Well, it is the current blog’s topic. Don’t you read my blog????”. “…..”

Frankly, I had enough of my sad breakfast with the arrowroot cookies and I have been looking for something more intriguing. Eventually, I came up with these mini cakes with coffee and chocolate…to start your day with the energy I need! (OK, it sounds as a commercial slogan :D).

Mini coffee cakes

(Doses for 10-12 mini cakes)

  • 2 eggs

  • 130 g of flour

  • 100 g of sugar

  • 80 g of melted butter

  • 50 g of dark chocolate chips (optional)

  • 2 small cups of espresso coffee*

  • 8 g of baking powder

  • a pinch of salt

*The small espresso cups, not the 250 mL cup!

Beat the eggs with the sugar. Incorporate the flour and then the butter. Now, add the coffee and a pinch of salt. Stir and add the baking powder. Keep stirring and incorporate, finally, the chocolate chips. Place small baking cups in a muffin mold and pour the better in the cups, so that each cup will be 2/3 filled. Bake in preheated convected oven at 180 C. Check the baking status with a cake tester. As soon as the cakes are ready, remove them from the oven and let them cool down before serving.
