Readers' requests: no-carb walnut mashed cauliflower
I haven’t been talking about no carb recipes since my departure to Italy. With the holidays looming, I totally forgot about this mashed cauliflower recipe to let me tempt, instead, by the yummy Christmas treats.
Following a reader’s request, I started the “Readers’ requests” column as well as developing a series of no carb recipes. I have already explained here that a no carb diet has no advantages over a hypocaloric one for the pursue of weight loss.
The recipe of mashed cauliflower was suggested by a friend of mine a few years ago, as an alternative to the classic mashed potatoes. I still remember my friend commenting about a dinner he took part in: “…And then we had mashed cauliflower, what an amazing dish…”. And given that the no carb diet bans potatoes, the idea of mashed cauliflower peeked out in my mind.
Walnut mashed cauliflower (no carb)
(Doses for 4-6 persons)
1 cauliflower
100 g of butter
a handful of walnuts
salt to taste
Clean the cauliflower, chop it into pieces and boil it in salty water. Once the cauliflower is well cooked and soft, drain it and place it aside. Melt the butter in a large pot under low flame. Add the cauliflower and mash it a bit with the aid of a wooden spoon. Let the excess of water evaporate and turn the flame off. Blend the cauliflower with an immersion blender. Serve it warm, sprinkled with chopped walnuts.
Option 1: you can boil the cauliflower in milk, for a richer taste.
Option 2: you can replace walnuts with other tree nuts (almonds, hazelnuts, cashews…)
